Our Strozzapreti is an elongate form of cavatelli with subtle twists and is our most texturally rewarding pasta. This shape interacts with the sauce in such a complete & versatile way, that one bite of this pasta will leave you wanting more- be sure to make plenty for dinner!
Try this pasta with a "alla Norma" style of sauce which has fresh mozzarella, tomatoes, eggplant and lots of fresh basil. Or, pair it with your favorite sauce style ranging from cacio e pepe, to a ragu, or even a pesto.
ORIGIN OF STROZZAPRETI
"Strozza Preti'' roughly means "priest strangler", which is quite the name for a pasta! This shape is said to have originated in Emilia-Romagna during a time when priests would regularly invite themselves into homes for meals. This pasta was created to be so delicious and with the hope that the priests would eat them too quickly and choke.
Strozzapreti pasta is also common in the cuisine of the Tuscany, Marche and Umbria regions of Italy, often as a hand rolled version. Our artisan strozzapreti will also work well with classic recipes from those regions.
